Check Before Cooking
  • Use 150g of shrimp in total after removing shells and tails, with bodies no more than 15mm thick. Remove the veins and arrange in a single layer without overlapping. Do not scale the time for larger shrimp.
  • The quantities, thickness, and initial conditions are based on my own experimental parameters; the optimal amounts and results on an actual appliance have not been verified. Start without preheating.
  • Place the ingredients on a single layer, spacing them apart and avoiding stacking. If they do not fit in a single layer, cook them in separate batches and check each batch individually. Since the interior will still be warm for subsequent batches, the results may not be the same.
  • Make sure that ingredients and containers do not exceed the MAX line and do not block the steam vents or hot air vents. Do not line the basket with paper or foil.
  • The initial cooking time setting does not represent the total time required to complete the dish. If the cooking process is paused for approximately 10 minutes, check the unit’s display and the remaining time before resuming.
  • Keep continuous use—including additional heating and cooking in batches—to less than 180 minutes. When using the appliance continuously, follow the instruction manual and allow the unit to cool completely before resuming use.

    Remove the veins from the shrimp

    Make a shallow slit along the back of each shrimp to remove the vein, rinse briefly under running water, and pat thoroughly dry. Make 2〜3 shallow slits on the underside and gently spread the flesh open without forcing it. Sprinkle 1g of salt over the entire surface, then wash your hands and utensils.

    Coat with a thin batter

    Mix 18g of cake flour with 22ml of water. Dip the shrimp in the mixture, shake off any excess liquid, and press 25g of breadcrumbs firmly onto the shrimp. Lightly brush the breading with 5g of rice bran oil. Do not reuse any breading that has come into contact with the raw shrimp.

    Bake on an oiled inner rack

    Fit the inner rack correctly and lightly coat it with the remaining 2g of rice bran oil. Arrange the shrimp in a single layer, then start the Air Oven at 175℃ for 10 minutes. After 5 minutes, pause the cycle, flip the shrimp, and resume cooking.

    Check the center temperature and heat further if needed

    After cooking, remove the dish while being careful of hot steam, select several plump shrimp, and insert a food thermometer into the center of each. Measure and confirm that the center temperature remains at 75℃ or higher for at least 1 minute continuously. A single temperature reading or the color of the shrimp is not sufficient to determine the required holding time. If the temperature falls below 75℃ or the holding time is insufficient, remove the thermometer, set the Air Oven to 175℃ for 5 minutes, and cook the shrimp for an additional 2〜3 minutes before manually stopping the timer and rechecking the temperature. The 2〜3-minute interval is for verification purposes only and does not represent the oven’s preset cooking time or a safety guarantee. Continue checking until the conditions are met, then transfer the shrimp to a serving dish using clean tongs and garnish with a slice of 1/8 of a lemon.

Check the results

Measure the temperature at the center of the thickest part of the body—it should be 75℃ or higher for 1 minute continuously. A reddish color or a curled tail does not guarantee that the food is fully cooked.

If you get stuck along the way

Insert a food thermometer with a thin tip into the food lengthwise. If the temperature cannot be measured correctly, do not consider the dish done based on this method.
