Salt-Grilled Salmon

This is a test recipe for seasoning 2 slices of raw salmon with salt and cooking them using the "Hi Steam" setting.

Initial Heating Settings

Check Before Cooking
  • Use a total of 200g of fish, with each piece no more than 20mm thick. The weight listed is the weight of the fish. Arrange the 2 pieces in a single layer, leaving space between them.
  • The quantities, thickness, and initial conditions are based on my own experimental parameters; the optimal amounts and results on an actual appliance have not been verified. Start without preheating.
  • Place the ingredients on a single layer, spacing them apart and avoiding stacking. If they do not fit in a single layer, cook them in separate batches and check each batch individually. Since the interior will still be warm for subsequent batches, the results may not be the same.
  • Make sure that ingredients and containers do not exceed the MAX line and do not block the steam vents or hot air vents. Do not line the basket with paper or foil.
  • The initial cooking time setting does not represent the total time required to complete the dish. If the cooking process is paused for approximately 10 minutes, check the unit’s display and the remaining time before resuming.
  • Keep continuous use—including additional heating and cooking in batches—to less than 180 minutes. When using the appliance continuously, follow the instruction manual and allow the unit to cool completely before resuming use.

    Ensure the fish pieces are uniform in size and thickness

    Check the raw salmon (unsalted fillets) for bones and remove them, then pat the surface dry. Slice open any pieces thicker than 20mm to make them thinner, then distribute 2g of salt over both sides of the 2 fillets. Cover and let sit in the refrigerator for 10 minutes, then wipe off any moisture that has accumulated. Wash your hands, cutting board, and knife after handling the fish, and keep them separate from those used for plating.

    Prepare the garnish and arrange the fish on the inner rack

    Cut 1/8 of a lemon into wedges. Place the inner rack in the correct orientation, lightly coat it with 2g of rice bran oil, and arrange the fish skin-side up without overlapping. Under these steaming conditions, we cannot guarantee that the skin will develop a deep golden brown color.

    Add water and heat

    Attach the steam catcher and water tray, then fill the water tank with room-temperature water only, up to the MAX line or below. If the water refill indicator appears, check the operating status; if the unit is running, pause it, remove the tank, refill it with room-temperature water, reattach the tank, verify the display, and resume operation. Do not preheat; start the cycle using “Hi Steam,” 180℃, and 15 minutes.

    Check the center temperature and heat further if needed

    After cooking, remove the food while being careful of hot steam, locate the thickest part of each of the 2 fillets, and insert a food thermometer into its center. Measure and confirm that the center temperature remains at 75℃ or higher for at least 1 continuous minute. A single temperature reading or the color of the surface is not sufficient to determine the required holding time. If the temperature falls below 75℃ or the holding time is insufficient, remove the thermometer, set the air fryer to “Hi Steam” at 180℃ for 5 minutes, and after approximately 2〜3 minutes, stop the cycle manually and remeasure. The 2〜3 minutes is a reference interval for checking and does not represent the appliance’s set time or a safety guarantee. Continue checking until the conditions are met, then plate the dish using clean utensils and garnish with lemon.

Check the results

Verify that the center of both cuts remains at 75℃ or higher for at least 1 minute continuously. Be careful of bones when eating, and do not assume the dish is done based on color alone.
