Breaded Cod

This is a test recipe in which 2 slices of cod are coated with lemon-flavored breadcrumbs and baked while taking care to prevent them from falling apart.

Initial Heating Settings

After cooking is complete, check the core temperature and holding time.

This is the cooking time for the first round. Please refer to the instructions for preheating. You’ll need to check for doneness and cook further as needed.

Sprinkle with salt and let sit in the refrigerator for 10 minutes. The total time, including prep and additional cooking, has not been measured.

Check Before Cooking
  • Use a total of 200g of cod, with the thickest part no more than 20mm. Place the 2 coated fillets in a single layer, leaving space between them.
  • The quantities, thickness, and initial conditions are based on my own experimental parameters; the optimal amounts and results on an actual appliance have not been verified. Start without preheating.
  • Place the ingredients on a single layer, spacing them apart and avoiding stacking. If they do not fit in a single layer, cook them in separate batches and check each batch individually. Since the interior will still be warm for subsequent batches, the results may not be the same.
  • Make sure that ingredients and containers do not exceed the MAX line and do not block the steam vents or hot air vents. Do not line the basket with paper or foil.
  • The initial cooking time setting does not represent the total time required to complete the dish. If the cooking process is paused for approximately 10 minutes, check the unit’s display and the remaining time before resuming.
  • Keep continuous use—including additional heating and cooking in batches—to less than 180 minutes. When using the appliance continuously, follow the instruction manual and allow the unit to cool completely before resuming use.

    Pat the cod dry

    Remove the bones from the cod, sprinkle with 1.5g of salt, let it sit in the refrigerator for 10 minutes, and then wipe off any moisture that has seeped out. Make sure the pieces are no thicker than 20mm. Wash your hands and any utensils that have come into contact with the fish.

    Making a Fragrant Batter

    Mix 15g of cake flour, 20ml of water, and 5ml of lemon juice. Lightly coat the surface of the cod with the mixture and shake off any excess liquid. Mix 25g of breadcrumbs and 0.3g of dried parsley, press the mixture firmly onto both sides of the fish, and lightly brush with 6g of olive oil.

    Cook without moving the fish too often

    Coat the properly installed inner rack with the remaining 2g of olive oil and place the cod inside. Start the Air Oven at 170℃ for 15 minutes. After 10 minutes, pause the cycle, use a spatula to support the fish so it doesn’t fall apart, flip it over, return it to the basket, and resume cooking.

    Check the center temperature and heat further if needed

    After cooking is complete, remove the food while being careful of hot steam, then select the 2 thickest slices and insert a food thermometer into the center of each. Measure and confirm that the center temperature remains at 75℃ or higher for at least 1 continuous minute. A single temperature reading or the color of the surface alone is not sufficient to determine the required holding time. If the temperature falls below 75℃ or the holding time is insufficient, remove the thermometer, set the Air Oven to 170℃ for 5 minutes, and cook for an additional 2〜3 minutes before manually stopping the cycle and rechecking the temperature. The 2〜3 minutes is a reference interval for checking and does not constitute the unit’s set time or a safety guarantee. Continue checking until the conditions are met, then remove the food with clean utensils and plate it.

Prioritize measurements taken at a core temperature of 75℃ or higher for 1 minute continuously. Whether the flesh flakes apart serves as an additional indicator of texture.
