This is a test run for cooking small fish, in which 6 refrigerated shishamo are arranged with space between them.

Check Before Cooking
  • Approximately 20g per 1 fish, with a total length of 13cm or less and a belly thickness of 15mm or less; 6 fish total 120g. Arrange in a single layer so the bellies do not touch. For fish containing roe, measure the temperature at the center of the belly.
  • The quantities, thickness, and initial conditions are based on my own experimental parameters; the optimal amounts and results on an actual appliance have not been verified. Start without preheating.
  • Place the ingredients on a single layer, spacing them apart and avoiding stacking. If they do not fit in a single layer, cook them in separate batches and check each batch individually. Since the interior will still be warm for subsequent batches, the results may not be the same.
  • Make sure that ingredients and containers do not exceed the MAX line and do not block the steam vents or hot air vents. Do not line the basket with paper or foil.
  • The initial cooking time setting does not represent the total time required to complete the dish. If the cooking process is paused for approximately 10 minutes, check the unit’s display and the remaining time before resuming.
  • Keep continuous use—including additional heating and cooking in batches—to less than 180 minutes. When using the appliance continuously, follow the instruction manual and allow the unit to cool completely before resuming use.

    Check the moisture content and size

    Use paper towels to pat the surface of the shishamo dry, then measure the thickness of the belly. Since we’re using salt-dried fish, no additional salt is needed. Wash your hands and any utensils that have come into contact with the fish, and slice 1/8 of a lemon.

    Lightly brush with oil and arrange them

    Place the inner rack in the correct orientation and lightly coat it with 2g of rice bran oil. Arrange the shishamo so that their bellies do not touch. If you cannot fit 6 fish in a single batch, divide them into 2 batches, and make sure the heads and tails do not block the steam vents.

    Flip halfway through and finish baking

    Start with the Air Oven set to 180℃ for 10 minutes. After 5 minutes, pause the cycle, use a spatula to support the food so as not to crush it, flip it over, return it to the oven, and resume cooking.

    Check the center temperature and heat further if needed

    After cooking, be careful of hot steam when removing the food. Select several fish with thick bellies (if they contain roe, choose the center of the belly where the roe is located) and insert a food thermometer into the center. Measure and confirm that the temperature at the center remains at 75℃ or higher for at least 1 continuous minute. A single temperature reading or the color of the skin alone is not sufficient to determine the required holding time. If the temperature falls below 75℃ or the holding time is insufficient, remove the thermometer, set the Air Oven to 180℃ for 5 minutes, and cook for an additional 2〜3 minutes before manually stopping cooking and rechecking the temperature. The 2〜3 minutes is an interval for checking and does not represent the oven’s set time or a safety guarantee. Continue checking until the conditions are met, then plate the fish using clean utensils and garnish with lemon. Be careful of the head, bones, and hot contents inside the belly when eating.

Measure to ensure that the temperature at the center of the belly remains at 75℃ or higher for 1 continuous minute. Do not judge readiness based solely on surface dryness or the color of the roe.

If you get stuck along the way

Do not press down or grab the fish; instead, use a spatula to support the entire fish.

It’s too thin to measure accurately

Before cooking, make sure you can measure the center of the belly with a food thermometer that has a thin tip. Do not consider the food done based solely on its color if you cannot take a temperature reading.
