Banana Muffins

Check Before Cooking
  • The trial quantity is 100g of pancake mix. Divide the batter evenly among 4 freestanding molds, filling each no higher than 6 tenths of its capacity and no deeper than 30mm. Arrange the molds in a single layer on the inner rack with gaps between them, keeping steam holes clear.
  • The quantities, thickness, and initial conditions are based on my own experimental parameters; the optimal amounts and results on an actual appliance have not been verified. Start without preheating.
  • Place the ingredients on a single layer, spacing them apart and avoiding stacking. If they do not fit in a single layer, cook them in separate batches and check each batch individually. Since the interior will still be warm for subsequent batches, the results may not be the same.
  • Make sure that ingredients and containers do not exceed the MAX line and do not block the steam vents or hot air vents. Do not line the basket with paper or foil.
  • The initial cooking time setting does not represent the total time required to complete the dish. If the cooking process is paused for approximately 10 minutes, check the unit’s display and the remaining time before resuming.
  • Check the mold’s instruction manual to confirm that it is oven-safe and to verify its heat resistance. Do not cover the container with a lid, and leave enough space so that even if the food expands, it will not come close to the MAX line or the heating element.
  • Keep continuous use—including additional heating and cooking in batches—to less than 180 minutes. When using the appliance continuously, follow the instruction manual and allow the unit to cool completely before resuming use.

    Check the markings on the pan and how to position it

    Prepare 4 freestanding silicone molds rated for oven use at 200℃ or higher that sit without tilting on the inner rack. Follow their product instructions. First check that they fit comfortably in the basket while leaving the appliance steam holes clear. Do not use microwave-only containers or unsupported paper cups. Divide 2g of rice bran oil into a thin coating inside the molds.

    Mix the banana batter

    Mash 60g of peeled banana with a fork until smooth, then mix in 50ml of milk, 10g of sugar, and 13g of rice bran oil. Add 100g of pancake mix and stir with a rubber spatula until no dry flour remains. Do not taste the batter before cooking.

    Bake in separate molds

    Pour the batter evenly into 4 molds, filling no higher than 6 tenths of capacity and no deeper than 30mm. Place them in a single layer on the correctly fitted inner rack, leaving room so the risen food remains below MAX. Do not pour flowing batter directly onto the rack. Start Air Oven at 160℃ for 20 minutes. If all 4 molds do not fit, cook them in groups of 2 and keep the remaining batter covered and refrigerated.

    Check the center of the dough and let it cool.

    Insert a bamboo skewer into the center of each muffin to ensure no sticky batter clings to it and that the surface has set. Distinguish between the moisture from the banana and raw batter; cut 1 open to confirm there is no raw batter in the center. If they aren’t done, set the Air Oven to 160℃ for 5 minutes; stop it manually after about 3 minutes and check again. Once baked, use oven mitts to remove the muffins in their molds and place them on a wire rack. Let it cool until it’s safe to handle, then remove the muffins from the molds.
