Fried Tofu with Ginger and Green Onions

  • Cut the thick fried tofu into pieces no more than 15mm thick and approximately 4cm in both width and height. Check the product label; do not apply these experimental conditions to frozen items or products that must be heated all the way through.

    Cut the thick fried tofu

    Lightly press a paper towel against the surface of 240g of refrigerated thick fried tofu, then cut it into pieces no more than 15mm thick and approximately 4cm square. Do not use products that come with a pre-packaged sauce; choose unseasoned ones instead.

    Lightly coat with oil and arrange

    Lightly brush 2g of rice bran oil onto the white cut surfaces. Place the pieces in a single layer on the correctly fitted inner rack, making sure they do not overlap. If you cannot fit all the pieces with space between them, divide them into 2 or more batches.

    Cook on both sides at 180℃

    Start without preheating the Air Oven at 180℃ for 15 minutes. After 10 minutes, pause the cycle, carefully pull out the tray (being careful of steam), flip the food over, return it to the oven, and resume cooking.

    Mix the sesame sauce

    Wash 6g of scallions, pat them dry, and slice them into small pieces. In a separate bowl, mix 8g of white sesame paste, 8ml of water, 1g of salt, 3g of lemon juice, and 4g of ginger until smooth, then add the scallions.

    Heat through to the center

    After 15 minutes, cut into a thick piece to check if it’s heated all the way through to the center. If it’s still cold, set the Air Oven to 180℃ for 5 minutes, then stop it manually after 2〜3 minutes to check again. If the surface becomes too hard, stop the cooking process.

    Serve and drizzle with sauce

    Transfer the thick fried tofu to a plate and drizzle the mixed sesame sauce over it. Do not place the chopped green onions or the sauce inside the air fryer; combine them after removing the tofu.

Once even thick pieces are heated through to the center, remove them from the air fryer and combine them with the sauce in a serving dish. If you get stuck along the way

The cut surface dries out too much

Since these foods are already pre-fried, I will refrain from extending the cooking time to achieve a deeper brown color. Next time, I will maintain a thickness of 15mm and not base my judgment solely on surface temperature.

The sesame sauce separates

First, mix the sesame paste thoroughly, then add water little by little to emulsify it. Do not attempt to warm the sauce inside the air fryer to adjust it.
