    Select and cut the potatoes

    Select mature potatoes without sprouts or green skin, wash them, and peel them. If sprouts or green areas are present, remove them generously along with the surrounding tissue. Weigh 250g of prepared potato and cut it into sticks with a 10mm-square cross-section and a length of 5〜6cm.

    Put the cut potatoes in a bowl with 500ml of water and leave for 5 minutes. Discard the water, drain in a colander, and pat the surfaces dry with paper towels. Do not use the paper towels during heating.

    Coat everything evenly with 7g of rice bran oil. Fit the inner rack correctly and arrange the items in a single layer, leaving space between each piece. If everything does not fit in one batch, cook in separate batches. Add salt at the end.

    Bake at 185℃, turning halfway through

    Start without preheating the Air Oven at 185℃ for 20 minutes. After 10 minutes, pause the cycle, carefully pull the basket out—being careful of the hot steam—and flip the food over with tongs. Return the basket to the oven and resume cooking.

    Check the center of a thick potato stick

    After 20 minutes, select several of the thicker pieces and insert a bamboo skewer through the center. If you feel firm resistance, set the Air Oven to 185℃ for 5 minutes, then manually stop it after 2〜3 minutes to check. The 2〜3 minutes are not part of the appliance’s preset settings. If the surface begins to brown heavily, stop the cooking process.

    Sprinkle with salt

    Once a bamboo skewer passes through to the center, use tongs to transfer the food to a bowl and sprinkle with 1.2g of salt. Aim for a light golden brown color; do not continue cooking until it turns dark brown. If you detect any bitterness or astringency, stop eating it immediately—including any food cooked alongside it.

If you get stuck along the way

The sticks stick together

After soaking, dry the potatoes thoroughly and separate each stick, 1 at a time, before arranging them. Do not pull them apart so forcefully during heating that they break. Use a smaller batch next time.

Only the outside turns brown

Check whether the pieces are thicker than 10mm. Stop extending the cooking time to obtain a dark brown color, and cut the pieces to a uniform size next time. Do not use the same cooking time for raw potatoes and frozen processed products.
