This is a prototype of meat patties with onions, divided into 4 portions and coated with breadcrumbs on both sides. The ingredient ratios, settings, and texture have not been verified using an actual air fryer.

Initial Heating Settings

    Finely chop 40g of onion, and moisten 10g of breadcrumbs for the mixture with 15g of milk. Mix 2g of salt and 0.3g of black pepper into 240g of cold ground meat mixture until it becomes sticky, then add the onion and moistened breadcrumbs and mix until uniform. Wash your hands and utensils after handling raw meat.

    Shape into thin pieces

    Divide the meat mixture into 4 equal portions and press out large air pockets while shaping round patties of approximately 77g per 1 patty, approximately 75mm in diameter, and no more than 18mm thick. Do not shape them into round balls. Refrigerate until just before cooking.

    Apply a thin coating

    Mix 9g of rice bran oil into 35g of breadcrumbs for the coating. Lightly dust the meat mixture with 15g of cake flour, shaking off any excess, then coat it first with 35g of beaten egg, followed by the breadcrumb mixture. Ensure the total thickness, including the coating, is 20mm or less, and discard any egg or flour that has come into contact with the raw meat.

    Arrange in a single layer

    Attach the inner rack to the basket in the correct orientation. Arrange the ingredients in a single layer without stacking them, leaving space between each piece. If everything does not fit, divide the batch into 2 or more portions and refrigerate the remaining portions. Do not line the basket with paper or foil, and do not block the steam vents. Do not fill beyond the MAX line.

    Air Oven: Start at 175℃

    Do not preheat; simply place the basket with the ingredients inside. Set the Air Oven to 175℃ for 20 minutes as an initial test and start the cycle. After 10 minutes, press START/STOP to pause, and carefully pull out the basket, being mindful of the hot steam. Flip the food, switch its position front to back, place it back in, and resume cooking. The display indicating “End” does not guarantee that the food is fully cooked.

    Measure the core temperature and holding time

    After 20 minutes, confirm that cooking has paused or ended, then pull out the basket. Insert the thermometer into the meat mixture at the center of all 4 pieces from the side to take a reading. Do not consider the dish done simply because the breadcrumbs are hot. Use a food-grade internal thermometer to confirm that the internal temperature remains at 75℃ or higher for at least 1 continuous minute. Measure the holding time after the reading stabilizes; if the temperature drops below 75℃ during this time, reheat and measure again. Do not judge doneness based on color, juices, or only 1 temperature reading. Remove the thermometer before reheating, and wash any parts that came into contact with uncooked meat before reusing.

    Cook further as needed and finish

    If the temperature or holding time is insufficient, set the Air Oven to 175℃ for 5 minutes and cook for an additional period. After about 2〜3 minutes, stop the process manually and recheck that the same core temperature is maintained for 1 minute continuously. Repeat this check as needed. The 2〜3 minutes is neither the time to set on the appliance nor a guarantee that the dish is fully cooked. Once the center meets these conditions, remove the dish with a clean spatula and serve with medium-thick sauce on the side.

If you get stuck along the way

If you flip it over, it will break.

Use 2 thin spatulas to support the bottom and sides, taking care not to squeeze too tightly. Next time, press out air as you shape the patties and handle the meat mixture while it’s still cold.

Only the batter turns color

Measure the center temperature at the thickest part of the meat mixture; if insufficient, cook further and check again. If burning becomes pronounced, stop cooking under these conditions and do not eat the patties yet. Finish them using another cooking method that can heat them thoroughly.
