Potato Chips

A thick-cut version using large potato slices 4mm thick. We have not verified whether this replicates store-bought thin potato chips or maintains a crispy texture after cooling.

After 5 minutes and 10 minutes, check for slices being blown about and for browning. Check the center after 15 minutes.

This is the cooking time for the first round. Please refer to the instructions for preheating. You’ll need to check for doneness and cook further as needed.

Soak in water for 5 minutes, then pat dry 1 piece at a time. The total time to completion—including prep, mid-cooking checks, and cooking in batches—has not been measured.

Check Before Cooking
  • Use only round slices that are at least 4cm in diameter and 4mm thick. Do not include small pieces from the edges, thin slices, or broken pieces. Modifying the recipe to use extremely thin slices is not permitted.
  • Install the inner rack in the correct orientation and arrange the food in a single layer with space between each piece. If the entire quantity does not fit, divide it into 2 or more batches, checking the results after each batch. The basket’s 3L capacity does not guarantee that it can hold the weight of this recipe.
  • Arrange the food in the basket without lining it with paper or aluminum foil, and make sure not to block the steam vents. Lightly coat the food with oil; do not let it pool in the basket.
  • These test conditions involve using main ingredients stored at room temperature and heating without preheating. Frozen items are not included.
  • Additional cooking and cooking batch 2 start with the interior already warm, so the same results as the initial batch are not guaranteed. Do not increase the quantity and extend the cooking time proportionally.
  • As the slices dry, the slices may shift due to the hot air. Do not leave the area while cooking. If the slices float, fly out, or come loose from the inner mesh, stop the process immediately and do not resume using this method. Do not place weights or paper on top afterward to hold them down. If you notice smoke or a burning smell, unplug the unit and discontinue use.
  • Keep continuous use—including additional heating and cooking in batches—to less than 180 minutes. When using the appliance continuously, follow the instruction manual and allow the unit to cool completely before resuming use.

    Measure the thickness and slice accordingly

    Peel the mature potatoes and thoroughly remove any sprouts or green parts, including the surrounding areas. Cut them into rounds at least 4cm in diameter and 4mm thick, then measure out 120g of usable slices. Do not include the small pieces from the ends.

    Soak, then dry both sides

    Soak in 400ml of water for 5 minutes, then drain. Spread out the slices and pat dry both sides with paper towels. Using a brush, lightly coat both sides with 4g of rice bran oil.

    Leave some space between them

    Fit the inner rack correctly and arrange the slices in a single layer without overlapping them. Since round slices take up more space, cook them in multiple batches if they don’t all fit at once. Do not place paper, foil, or weights in the basket.

    Monitor the progress at 160℃

    Start without preheating in the Air Oven at 160℃ for 15 minutes. Pause after 5 and 10 minutes to check the arrangement and color, and flip the slices after 10 minutes. If slices float or fly out, stop the process and do not resume cooking. If you notice unusual smoke or a burning smell, unplug the appliance.

    Check for a thick center

    After 15 minutes, pass a bamboo skewer into the center to check for hard, raw areas. Do not apply additional heating to slices that have become light and dry enough to lift in the airflow. Only if hardness remains and there is no burning or movement of slices should you set Air Oven to 160℃ for 5 minutes, stop manually after 1〜2 minutes, and check again. The 1〜2 minutes is not the appliance setting.

    Spread them out on a plate and sprinkle with salt.

    Use tongs to spread the cooked slices onto a plate and sprinkle 0.6g of salt evenly over them. Let them cool to an edible temperature and check their condition. Even if they remain slightly soft, do not continue drying them in the air fryer in an attempt to make them crispy. If they taste bitter or astringent, do not eat them.

Check the results

Stop cooking once the food is heated through and has taken on a light color. These differ in thickness from ultra-thin fried chips, so it is unclear whether they will turn out crispy. The flavor, texture, and additional cooking time required have not been verified using an actual air fryer.

The drying results for 4mm-thick slices have not been verified. I will not repeat the baking process solely for the sake of texture; instead, I will record the results from this attempt.

Slices may shift or float

Stop immediately and do not reheat using this method. Do not attempt to remedy the situation by adding paper or weights. Do not try to improve the results by slicing the food thinner next time.
