Crispy Roasted Shiitake Mushrooms

A test recipe in which the caps of store-bought fresh shiitake mushrooms are baked whole, and sudachi juice is squeezed over them afterward. Cook until the thick caps are heated all the way through to the center.

  • Use mushrooms with a diameter of 4〜6cm and a maximum thickness of 15mm at their thickest point. Cut off the stems at the base and do not include them in this recipe. Wild mushrooms are not included.
  • Install the inner rack in the correct orientation and arrange the food in a single layer with space between each piece. If the entire quantity does not fit, divide it into 2 or more batches, checking the results after each batch. The basket’s 3L capacity does not guarantee that it can hold the weight of this recipe.
  • Arrange the food in the basket without lining it with paper or aluminum foil, and make sure not to block the steam vents. Lightly coat the food with oil; do not let it pool in the basket.
  • These are test conditions in which refrigerated main ingredients are heated immediately after preparation, without preheating. Frozen items are not included.

    Prepare uniform mushroom caps

    Wipe any dirt off the refrigerated, store-bought shiitake mushrooms with a damp paper towel. Cut the stems off at the base and measure out 150g of caps only. Exclude any caps thicker than 15mm from this recipe.

    Coat with oil and salt

    Lightly brush both sides of the mushroom caps with 5g of rice bran oil, then sprinkle 0.8g of salt evenly over them. Set the inner rack correctly and place the pieces in a single layer with the gills facing up. If they overlap, separate them and cook them in separate batches.

    Heat to 175℃

    Set the Air Oven to 175℃ for 15 minutes without preheating, then start the cycle. After 10 minutes, pause the cycle to check the color and arrangement of the food, then resume cooking for the remaining time. Stop cooking immediately if small pieces start flying out or if you notice an unusual odor.

    Check the center of the thick mushroom caps

    After 15 minutes, select several thick mushroom caps and insert a food thermometer from the side toward the center. In this test, the condition for confirming proper cooking is that the temperature at the center remains at 75℃ or higher for at least 1 continuous minute. The holding time cannot be confirmed based on a single instantaneous reading from the thermometer. If the temperature drops below this level during the process, add more cooking time and reconfirm. Do not eat raw shiitake mushrooms based on their color alone.

    Add if necessary

    If the temperature or holding time is insufficient, remove the thermometer and set the Air Oven to 175℃ for 5 minutes. After 2〜3 minutes, stop the cycle manually and check the center again. The set temperature is not the food’s core temperature. If the caps begin to burn, stop the extension and do not eat the food if it is undercooked.

    Add fruit juice

    Once the mushrooms are cooked through, remove them to a plate and drizzle 5g of sudachi juice over them. Do not add the juice or the thin stems to the basket to cook.

Moisture remains in the gills

Mushrooms release their own moisture. Prioritize ensuring the center is cooked through rather than completely drying out the moisture, and do not continue drying them for too long.

Only thin mushroom caps shrink

Next time, make sure the mushroom caps are the same thickness and diameter. Do not bake small stems along with them and apply the same cooking time.
