Sweet Potato Chips

A prototype recipe for thick-cut slices: bake 5mm-thick rounds in a single layer. Do not add sugar; sprinkle a very small amount of salt after removing them from the air fryer.

Check for pieces flying about and for browning every 5 minutes, and turn the food over after 10 minutes.

This is the cooking time for the first round. Please refer to the instructions for preheating. You’ll need to check for doneness and cook further as needed.

Soak in water for 5 minutes, then dry the slices one by one. The total time required to complete the recipe—including preparation, checking progress, and cooking in batches—has not been measured.

Check Before Cooking
  • Use round slices that are at least 4cm in diameter and 5mm thick. Do not include small pieces, paper-thin slices, or broken pieces. Do not coat with sugar before heating.
  • Install the inner rack in the correct orientation and arrange the food in a single layer with space between each piece. If the entire quantity does not fit, divide it into 2 or more batches, checking the results after each batch. The basket’s 3L capacity does not guarantee that it can hold the weight of this recipe.
  • Arrange the food in the basket without lining it with paper or aluminum foil, and make sure not to block the steam vents. Lightly coat the food with oil; do not let it pool in the basket.
  • These test conditions involve using main ingredients stored at room temperature and heating without preheating. Frozen items are not included.
  • Additional cooking and cooking batch 2 start with the interior already warm, so the same results as the initial batch are not guaranteed. Do not increase the quantity and extend the cooking time proportionally.
  • As the slices dry, the slices may shift due to the hot air. Do not leave the area while cooking. If the slices float, fly out, or come loose from the inner mesh, stop the process immediately and do not resume using this method. Do not place weights or paper on top afterward to hold them down. If you notice smoke or a burning smell, unplug the unit and discontinue use.
  • Keep continuous use—including additional heating and cooking in batches—to less than 180 minutes. When using the appliance continuously, follow the instruction manual and allow the unit to cool completely before resuming use.

    Prepare large round slices

    Thoroughly wash the room-temperature sweet potatoes and remove any damaged parts. Cut them into rounds with the skin on, 5mm thick and at least 4cm in diameter, and weigh out 150g of the slices. Do not include the thin ends.

    Soak in water, then brush with oil

    Soak in 400ml of water for 5 minutes, then drain the water and wipe both sides thoroughly. Use a brush to apply a thin, even coat of 4g of rice bran oil. Use the paper only for wiping; do not place it inside the unit.

    Arrange the food and start at 160℃

    Arrange the round slices in a single layer on a properly installed inner rack, leaving space between them. If there isn’t enough space, divide them into 2 or more batches. Start the Air Oven at 160℃ for 20 minutes without preheating.

    Tracking Dryness and Color

    Pause every 5 minutes to check the color and placement, and flip them over after 10 minutes. If the slices float or fly out, stop the process and do not resume using this method. If you notice smoke or a burnt smell, unplug the appliance and stop using it.

    Check the center and remove it

    After 20 minutes, insert a bamboo skewer into the center of a thick slice. Only if raw firmness remains, with no burning or pieces flying about, set Air Oven to 160℃ for 5 minutes, then stop manually after 1〜2 minutes and check again. Do not cook further any slices that have dried, become light, and are easily moved.

    Sprinkle with salt and let cool

    Spread the heated slices on a plate and sprinkle 0.5g of salt evenly over them. Let them cool to a safe eating temperature. Do not repeatedly return them to the air fryer solely for the sake of texture.

Stop cooking when the center of the slices is no longer has raw firmness, and the edges are not yet charred. Because the slices are 5mm thick, the inside may remain soft; the texture after cooling has not been verified. The flavor, texture, and any additional cooking time required have not been confirmed using the actual appliance.

If you get stuck along the way

Only part of it suddenly turns brown

The rate at which the color develops varies depending on the variety, slice thickness, and amount of sugar. Do not cook further any slices that have already darkened; next time, measure them to 5mm to ensure uniformity.

It becomes soft when it cools.

These conditions are not intended to achieve the same level of dryness as fried potato chips. Do not slice the ingredients thinner or dry them for longer periods; instead, record the results as part of your prototyping notes.
