Check Before Cooking
  • Approximately 120g per 1 fillet, no more than 25mm thick. Do not apply these settings to still-frozen fillets or thick blocks of salmon.
  • Attach the crisper plate and arrange the ingredients in a single layer without stacking them. If you cannot ensure there is enough space, divide the ingredients into 2 batches. The 4.7L capacity does not represent the maximum food weight.
  • These test conditions involve preparing the unit while it is cool, preheating it to 180℃ using the “Preheat” function, and then adding the ingredients. The standard preheating time for this temperature is 4 minutes.
  • Do not place ingredients or paper inside while preheating. Do not use any mode that requires adding water, and do not fill the basket with water, oil, or sauce. Ensure proper ventilation of the plate.
  • If you are cooking in 2 batches, refrigerate the waiting ingredients as needed. Wait until the unit and plate have cooled sufficiently before resuming with the same preheating settings. The cooling time has not been measured.
  • Be sure to use a food-grade internal thermometer. Do not rely solely on the initial cooking time, surface color, meat juices, or photos to determine whether the food is cooked through.

    Pat the salmon dry

    If there are any bones remaining, remove them, then pat the salmon dry with paper towels. Sprinkle salt on both sides, cover, and let sit in the refrigerator for 5 minutes; then pat off any moisture that has seeped out.

    Lightly brush with oil

    Lightly brush the surface of the fish with rice bran oil. Keep utensils that have come into contact with the fish separate from those used for finishing.

    Once preheating is complete, remove the basket and arrange the ingredients on the plate, leaving space between them so they aren’t stacked. Return the basket to the unit, manually set the temperature and time to 180℃ and 8 minutes, and start the cycle. Do not use the preset’s default time. After about 4 minutes, check the surface color and whether the flesh is falling apart; if possible, flip the ingredients once using a wide spatula.

    Check the core temperature and holding time

    Once cooking is complete, select several thick pieces and insert a clean food thermometer from the side toward the center to take the temperature. If there are bones, do not let the tip touch them. Verify that the center temperature remains at 75℃ or higher continuously for at least 1 minute. Simply reaching 75℃ once is not sufficient to confirm the holding time. Do not consider the dish done based on color or photos alone.

    Heat further if needed, then finish

    If the center temperature or holding time is insufficient, remove the ordinary thermometer, return the food to the appliance, and cook further using manual settings at 180℃ in increments of 1 minute, measuring again after each increment. The 1 minute is a checking interval, not a guarantee of safety. If the center is still insufficiently heated even as the surface starts to burn, do not eat the food; switch to another heating method, such as a pot or frying pan. Once the center meets the heating requirements, plate carefully without breaking up the fish and add lemon if desired.

Before eating, confirm that the center temperature remains at 75℃ or higher continuously for at least 1 minute. Browning is only a supporting check of texture. Flavor, texture, and the actual additional heating time have not been verified through cooking.

If you get stuck along the way

The core temperature is not high enough after 8 minutes

Cook further and measure the temperature again. The required time varies with fillet thickness and starting temperature; completion in 8 minutes is not guaranteed.

It falls apart when turned over

Use a wide spatula and avoid forcing the food around. Next time, I’ll reevaluate the placement and spacing of the fillets.
