    Attach the inner rack to the basket in the correct orientation. Arrange the ingredients in a single layer without stacking them, leaving space between each piece. Do not fill beyond the MAX line.

    Do not preheat; simply place the basket with the ingredients inside. Set the Air Oven to 180℃ for 15 minutes as an initial test and start the cycle.     After 15 minutes, confirm that cooking has paused or ended, then pull out the basket. Measure several thick pieces of meat, inserting the probe from the side of the flat face to check the center temperature. Use a food-grade internal thermometer to confirm that the internal temperature remains at 75℃ or higher for at least 1 continuous minute. Wait until the reading stabilizes before timing the holding period; if the temperature drops below 75℃ during this time, reheat the meat and then recheck the temperature. Do not rely on color, juices, or only 1 temperature reading to determine doneness. Remove the thermometer before reheating, and wash any parts that have come into contact with uncooked meat before reusing them.

    Cook further as needed and finish

    If the temperature or holding time is insufficient, set Air Oven to 180℃ for 5 minutes to cook further. Stop manually after about 2〜3 minutes and recheck the same center-temperature requirement and continuous holding time of 1 minute. Repeat the same check if needed. The 2〜3 minutes is neither the time to set on the appliance nor a guarantee of completion. Transfer meat that meets the requirements to a clean plate, coat it with sweet-and-sour sauce a little at a time, and serve with the refrigerated white sauce. Finish checking that the center is adequately heated before immersing the meat in the sauce.

The dish is considered done once a thermometer confirms that the internal temperature has remained at 75℃ or higher for at least 1 continuous minute. If you get stuck along the way

The egg batter sticks to the mesh

Use a thin spatula to support the bottom and remove it. Next time, pour off the excess egg mixture to create a thin layer. Do not change the method to one where the liquid is pooled at the bottom while cooking.

The sweet-and-sour sauce softens the batter.

Add only the amount needed just before eating. Return any meat that needs more cooking to the appliance before dipping it in the sauce, and season it only after the center meets the requirements.
