Check Before Cooking
  • Use chicken thighs weighing 250g for 1 piece and open out the thick parts to 2cm or less. This thickness is a trial condition proposed by Crisp.
  • Make sure you can place the 2 pieces of meat side by side without overlapping them. If they don’t fit side by side, cook them 1 at a time and check for doneness each time.
  • Fill the water tank only with room-temperature water, up to the MAX line or below. Do not add seasonings, oil, or boiling water.
  • These are experimental conditions for cooking meat straight from the refrigerator without preheating. Adaptation to other models or frozen meat has not been verified.
  • The device is designed to turn off automatically if left on “Pause” for about 10 minutes. If you pause the cycle, check the remaining time and settings, and do not restart the cooking process by adding the full cooking time from the beginning.
  • Keep continuous use—including additional heating and cooking in batches—to less than 180 minutes. When using the appliance continuously, follow the instruction manual and allow the unit to cool completely before resuming use.

    Cut into uniform thickness and season lightly

    Do not wash the chicken; pat it dry with paper towels instead. Slice into the thicker parts of the meat to flatten it, ensuring the thickness is 2cm or less. Divide 4g of salt, 0.3g of black pepper, and 0.5g of dried rosemary between the 2 pieces and rub the seasoning into both sides. Wash your hands and any utensils that have come into contact with the raw meat.

    Prepare the water and inner rack

    Make sure the steam collector and water collection tray are both properly installed. Fill the water tank with room-temperature water up to the MAX line and reinstall it correctly. Place the inner mesh in the correct orientation inside the basket, and arrange the meat in a single layer with the skin side up. Do not stack the meat, and make sure not to block the steam vents. If you cannot fit 2 pieces side by side, cook them 1 at a time.

    Heat in Hi Steam

    Without preheating, set the basket in place and start the cycle using the “Hi Steam” setting at 180℃ for 20 minutes. If a water refill prompt appears, follow these steps: Check the water refill indicator and the unit’s operating status. If the appliance is running, press START/STOP to pause, remove the water tank, and refill it with room-temperature water up to the MAX line or below. Reinsert the tank properly, check the display, and resume cooking.

    Check the core temperature and holding time

    After 20 minutes, pull out the basket carefully, avoiding hot steam. Insert a food thermometer into the center of the thickest part of each piece and confirm that the center remains at 75℃ or higher continuously for at least 1 minute. 1 reading or browning alone cannot establish the holding time. If the temperature drops below 75℃ during this check, heat further and check again. Remove the thermometer before heating.

    Heat further as needed to finish

    If the core temperature or holding time is insufficient, set the air fryer to “Hi Steam,” 180℃, and 5 minutes to extend the cooking time. After about 2〜3 minutes, stop the cycle manually to check, and repeat as needed. The 2〜3-minute interval is for checking and does not guarantee that the food is safely cooked through. Once the conditions are met, remove the food with clean tongs, slice it, and serve with lemon if desired.

For both pieces of chicken, 2 in total, confirm that the center stays at 75℃ or higher for at least 1 minute. Skin crispness has not been verified. Because this recipe uses steam, do not continue heating for a long time solely to obtain browning.

If you get stuck along the way

The outside may be browned, but the center remains at a low temperature

Prioritize the internal temperature when adding additional cooking time. Next time, make sure the pieces are all the same thickness and don’t overlap. The set temperature of 180℃ does not refer to the internal temperature of the meat.

2 pieces won’t fit side by side

Cook 1 piece at a time. Use the initial settings and check the temperature for each batch, and consider the total time for the full quantity separately from the time displayed for 1 batch.
